Fresh in summer, or in a jar in winter: a dessert that that mixes peaches with amaretto biscuits, dark chocolate, and cocoa. Peaches are among the most popular fruit varieties in the Roero area and are the focus of a fair held in Canale in July. Originally from China, peaches appear in many legends and myths, like the one saying that they can make people immortal. What’s certain, however, is that this dessert did indeed become immortal, thanks to the flavour of amaretto biscuits. As suggested by their name (amaro means bitter in Italian), these biscuits (as the liqueur bearing the same name, which is also an ingredient of this dessert) have a slightly bitter flavour given by almonds and peach kernels. This tasty dessert, which is a variation of the traditional Piemontese persi pien, originally came from the countryside. The recipe was handed down from mother to daughter and usually made as a worthy conclusion for the Ferragosto meal. In fact, this holiday is celebrated on August 15th, at the peak of summer, when peaches are juicier and more fragrant.
